{"id":1,"date":"2015-06-18T18:56:25","date_gmt":"2015-06-18T18:56:25","guid":{"rendered":"http:\/\/www.daniellebinns.com\/stagingsite\/?p=1"},"modified":"2019-07-04T13:56:02","modified_gmt":"2019-07-04T17:56:02","slug":"zucchini-blueberry-bread-glutenfree","status":"publish","type":"post","link":"https:\/\/www.daniellebinns.com\/stagingsite\/2015\/06\/zucchini-blueberry-bread-glutenfree\/","title":{"rendered":"Zucchini Blueberry Bread (gluten-free)"},"content":{"rendered":"<p>Mom&#8217;s come to me with a variety of questions, but if I could get a penny every time I heard this one, I&#8217;d be rich:)<\/p>\n<p><strong>&#8220;<em>What can I give my child as a healthy snack to go?&#8221;\u00a0<\/em> <\/strong><\/p>\n<p>This post is dedicated to all those mom&#8217;s out there who have, or will soon, reach out to me for snack solutions.\u00a0\u00a0 This recipe\u00a0is nut-free so a safe option in the presence of other kiddies at daycare or school.\u00a0 It&#8217;s also VERY low in sugar so\u00a0don&#8217;t expect the same level\u00a0sweetness you would get in a traditional banana bread.<\/p>\n<p><em>Nutrient-boost:<\/em> Pair it with a protein like hemp seed butter (or other nut butter if allergens are not a concern) or\u00a0hummus,\u00a0and you&#8217;ve got yourself a well rounded snack.\u00a0 A few extra veggies or fruit on the side wouldn&#8217;t hurt either.<\/p>\n<p>I made this with spelt flour from <a href=\"http:\/\/www.grainstorm.com\/pages\/rant\" target=\"_blank\" rel=\"noopener noreferrer\">Grainstorm<\/a> but you can easily transform this into a gluten-free recipe with other flours.<\/p>\n<p><a href=\"http:\/\/www.daniellebinns.com\/stagingsite\/wp-content\/uploads\/2015\/03\/Zucchini-blueberry-bread3.jpg\"><img decoding=\"async\" loading=\"lazy\" class=\"aligncenter size-large wp-image-616\" src=\"http:\/\/www.daniellebinns.com\/stagingsite\/wp-content\/uploads\/2015\/03\/Zucchini-blueberry-bread3-1024x567.jpg\" alt=\"Zucchini blueberry bread3\" width=\"1024\" height=\"567\" srcset=\"https:\/\/www.daniellebinns.com\/stagingsite\/wp-content\/uploads\/2015\/03\/Zucchini-blueberry-bread3-1024x567.jpg 1024w, https:\/\/www.daniellebinns.com\/stagingsite\/wp-content\/uploads\/2015\/03\/Zucchini-blueberry-bread3-300x166.jpg 300w, https:\/\/www.daniellebinns.com\/stagingsite\/wp-content\/uploads\/2015\/03\/Zucchini-blueberry-bread3-610x338.jpg 610w, https:\/\/www.daniellebinns.com\/stagingsite\/wp-content\/uploads\/2015\/03\/Zucchini-blueberry-bread3-1080x598.jpg 1080w, https:\/\/www.daniellebinns.com\/stagingsite\/wp-content\/uploads\/2015\/03\/Zucchini-blueberry-bread3.jpg 1820w\" sizes=\"(max-width: 1024px) 100vw, 1024px\" \/><\/a><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li>2 eggs (or see below for &#8220;vegan eggs&#8221;)<\/li>\n<li>1\/4 cup coconut oil (or olive oil)<\/li>\n<li>3 Tbsp. maple syrup<\/li>\n<li>1 cup shredded zucchini<\/li>\n<li>1 banana<\/li>\n<li>1\/2 cup mashed blueberries<\/li>\n<li>1 tsp vanilla<\/li>\n<li>1 tsp cinnamon<\/li>\n<li>1 1\/2 cups spelt flour (or gluten-free all purpose flour, or brown rice flour)<\/li>\n<li>1\/2 tsp baking powder<\/li>\n<li>1\/2 tsp baking soda<\/li>\n<li>1\/2 tsp sea salt<\/li>\n<\/ul>\n<p>Vegan Eggs:\u00a0 2 tbsp ground flax seed + 6 tbsp water (vegan \u201ceggs\u201d).\u00a0Mix and let sit for 5 minutes before adding to rest of wet ingredients.<\/p>\n<p><strong>Directions:<\/strong><\/p>\n<ol>\n<li>Preheat oven to 325 F.<\/li>\n<li>Mix the oil, maple syrup, zucchini, banana\u00a0and vanilla in a medium bowl. Then\u00a0stir in the eggs (or &#8216;vegan eggs&#8217;).<\/li>\n<li>Mix flour, cinnamon, baking powder, baking soda and sea salt.<\/li>\n<li>Mix dry\u00a0and wet ingredients until combined.<\/li>\n<li>Pour batter into greased loaf pan\u00a0and bake 50-60 minutes or until browned and a toothpick comes out clean.\u00a0 Note: the batter is quite wet with the spelt flour but the end product turned out perfectly moist.<\/li>\n<\/ol>\n<p><a href=\"http:\/\/www.daniellebinns.com\/stagingsite\/wp-content\/uploads\/2015\/03\/Zucchini-blueberry-bread1.jpg\"><img decoding=\"async\"
