{"id":4519,"date":"2018-04-12T15:25:18","date_gmt":"2018-04-12T19:25:18","guid":{"rendered":"http:\/\/www.daniellebinns.com\/stagingsite\/?p=4519"},"modified":"2019-07-02T22:28:53","modified_gmt":"2019-07-03T02:28:53","slug":"liver-picky-eaters","status":"publish","type":"post","link":"https:\/\/www.daniellebinns.com\/stagingsite\/2018\/04\/liver-picky-eaters\/","title":{"rendered":"LIVER: the perfect food for picky eaters (and tired parents)"},"content":{"rendered":"<p>&nbsp;<\/p>\n<p>Geesh.<\/p>\n<p>Being a Nutritionist comes with some guilt.<\/p>\n<p>I know I should be feeding my family super nutrient-dense foods like bone broth, organ meats, fermented veggies, etc.\u00a0 However, I seem to stumble back to my safe place with our favourite foods.<\/p>\n<p>Don&#8217;t get me wrong, we eat <em>really<\/em> well (lots of veg, quality proteins, and very few packaged foods) but if I were being judged by fellow Holistic Nutritionists I might get a B+.<\/p>\n<p><strong>If I know what I should be offering, why am I not doing it?\u00a0<\/strong> For lots of bad reasons&#8230;<\/p>\n<p>Mainly I&#8217;m unwilling to venture to the unknown.\u00a0 I&#8217;m aware of the risk that organ meats and fermented veggies may not get eaten. My girls are adventurous however, these nutrient dense foods come with powerful flavours.<\/p>\n<p>But hold on!\u00a0 My girls love olives, pickles, kombucha, and spicy sushi, which aren&#8217;t exactly mild tasting foods.\u00a0 I told you my reasons were poor.\u00a0 Naomi proved me wrong &#8211; here she is eating another piece of liver meatloaf (see below) with salad.\u00a0 Mackenzie looks intrigued.<\/p>\n<p><img decoding=\"async\" loading=\"lazy\" class=\"size-large wp-image-4527 aligncenter\" src=\"http:\/\/www.daniellebinns.com\/stagingsite\/wp-content\/uploads\/2018\/04\/fullsizeoutput_30e4-576x1024.jpeg\" alt=\"\" width=\"576\" height=\"1024\" srcset=\"https:\/\/www.daniellebinns.com\/stagingsite\/wp-content\/uploads\/2018\/04\/fullsizeoutput_30e4-576x1024.jpeg 576w, https:\/\/www.daniellebinns.com\/stagingsite\/wp-content\/uploads\/2018\/04\/fullsizeoutput_30e4-169x300.jpeg 169w, https:\/\/www.daniellebinns.com\/stagingsite\/wp-content\/uploads\/2018\/04\/fullsizeoutput_30e4-768x1366.jpeg 768w, https:\/\/www.daniellebinns.com\/stagingsite\/wp-content\/uploads\/2018\/04\/fullsizeoutput_30e4-300x534.jpeg 300w, https:\/\/www.daniellebinns.com\/stagingsite\/wp-content\/uploads\/2018\/04\/fullsizeoutput_30e4-610x1085.jpeg 610w, https:\/\/www.daniellebinns.com\/stagingsite\/wp-content\/uploads\/2018\/04\/fullsizeoutput_30e4-1080x1921.jpeg 1080w, https:\/\/www.daniellebinns.com\/stagingsite\/wp-content\/uploads\/2018\/04\/fullsizeoutput_30e4.jpeg 1152w\" sizes=\"(max-width: 576px) 100vw, 576px\" \/><\/p>\n<p><strong>Then the universe spoke to me&#8230;<\/strong><\/p>\n<p>Not only was beef liver on sale at our local butcher Rowe Farms.\u00a0 But I also stumbled on an article about organ meats.\u00a0 Both in the same day.<\/p>\n<p>Whoa universe&#8230;I get the message!<\/p>\n<p>It was time to walk the &#8220;picky eating expert&#8221; talk.\u00a0\u00a0Just as I ask other parents, I had to ask myself: <em>how can kids learn to like {insert new food} if they don&#8217;t see or try them?<\/em><\/p>\n<p>It was time to add a few more things to <a href=\"http:\/\/www.daniellebinns.com\/stagingsite\/2016\/08\/high-calorie-foods-kids\/\">our list of nutrient-dense foods<\/a>\u00a0&#8211; starting with good ol&#8217; beef liver.<\/p>\n<p><strong>Flashback&#8230;<\/strong><\/p>\n<p>When my former picky eater, Sienna, had such a teeny tiny appetite liver was on the menu once every few weeks.\u00a0 She didn&#8217;t eat a lot of it, but she was getting way more nutrition out of one bite of liver versus a few crackers or pieces of fruit.<\/p>\n<p>Once I implemented <a href=\"http:\/\/www.daniellebinns.com\/stagingsite\/webinar\">a new mealtime approach<\/a> and her picky eating habits fell away, liver gradually fell off the menu too. Shame on me!<\/p>\n<p><strong>Flash forward&#8230;<\/strong><\/p>\n<p>Mackenzie is almost 6 months old and ready to start solids soon (someone pinch me).\u00a0 So I&#8217;m thinking about what those first foods will be and liver is going to be on that list.<\/p>\n<p><img decoding=\"async\" loading=\"lazy\" class=\"wp-image-4526 aligncenter\" src=\"http:\/\/www.daniellebinns.com\/stagingsite\/wp-content\/uploads\/2018\/04\/Is-liver.png\" alt=\"\" width=\"591\" height=\"496\" srcset=\"https:\/\/www.daniellebinns.com\/stagingsite\/wp-content\/uploads\/2018\/04\/Is-liver.png 940w, https:\/\/www.daniellebinns.com\/stagingsite\/wp-content\/uploads\/2018\/04\/Is-liver-300x251.png 300w, https:\/\/www.daniellebinns.com\/stagingsite\/wp-content\/uploads\/2018\/04\/Is-liver-768x644.png 768w, https:\/\/www.daniellebinns.com\/stagingsite\/wp-content\/uploads\/2018\/04\/Is-liver-610x511.png 610w\" sizes=\"(max-width: 591px) 100vw, 591px\" \/><\/p>\n<h3>But isn&#8217;t liver full of toxins?!<\/h3>\n<p>Before I did my research, I thought liver was a mecca for heavy metals, drugs, chemicals, and other byproducts.\u00a0 After all, it is known for its role in the detoxification process.<\/p>\n<p><strong>Here&#8217;s the truth about liver:<\/strong><\/p>\n<ul>\n<li>The liver DOES process toxins we are exposed to.<\/li>\n<li>The liver DOES store nutrients for the detoxification process.<\/li>\n<li><span class=\"text_exposed_show\">The liver DOES NOT store toxins though (they are removed through feces or urine).<\/span><\/li>\n<\/ul>\n<div class=\"text_exposed_show\">\n<p>So we are consuming all the nutrients our own liver needs to effectively clean house, but not the toxins themselves.<\/p>\n<p><strong>Liver is one of the most nutrient-dense foods on the planet.\u00a0\u00a0<\/strong><\/p>\n<p>There&#8217;s a reason it is dubbed as &#8220;nature&#8217;s multivitamin&#8221;.<\/p>\n<p>A mere 2oz of liver contains:<br \/>\n* 356% of your RDA of Vitamin A<br \/>\n* 658% of Vitamin B12<br \/>\n* 112% of Vitamin B2<br \/>\n* 50% of Vitamin B3<br \/>\n* 40% of Vitamin B5<br \/>\n* 36% of folate (Vitamin B9)<br \/>\n* 20% of Iron<br \/>\n* 20% of Zinc<\/p>\n<p>Not only does it have all of the above nutrients in substantial doses, these nutrients are more bioavailable (coming from food vs. a manufactured pill with synthetic versions of vitamins and minerals).<\/p>\n<p><strong>Those B vitamins are exactly what tired parents need to keep their energy levels up.<\/strong> They are in food form and combined with other B vitamins, which improves absorption.<\/p>\n<p><strong>Liver is also a fabulous food for picky eaters.\u00a0<\/strong>\u00a0For instance, iron and zinc are linked to poor appetite. I need to give my family (and picky eater) liver<\/em>&#8220;, let&#8217;s talk about how.<\/p>\n<h2>How to make liver for picky eaters (and your family)<\/h2>\n<p>Here are a few great ways to serve liver to your little and big ones.\u00a0 Firstly, I suggest starting with a mild tasting liver like chicken, duck and calf liver before going full throttle with beef liver.<\/p>\n<h4><img decoding=\"async\" loading=\"lazy\" class=\" wp-image-4520 aligncenter\" src=\"http:\/\/www.daniellebinns.com\/stagingsite\/wp-content\/uploads\/2018\/04\/livermeatloaf2-2.jpg\" alt=\"\" width=\"648\" height=\"432\" srcset=\"https:\/\/www.daniellebinns.com\/stagingsite\/wp-content\/uploads\/2018\/04\/livermeatloaf2-2.jpg 768w, https:\/\/www.daniellebinns.com\/stagingsite\/wp-content\/uploads\/2018\/04\/livermeatloaf2-2-300x200.jpg 300w, https:\/\/www.daniellebinns.com\/stagingsite\/wp-content\/uploads\/2018\/04\/livermeatloaf2-2-610x407.jpg 610w\" sizes=\"(max-width: 648px) 100vw, 648px\" \/><\/h4>\n<h4>Make meatloaf<\/h4>\n<p><a href=\"https:\/\/functional-foodie-nutrition.com\/family-meals\/delicious-paleo-meatloaf-with-liver-that-even-kids-will-love\/\">This recipe is great.<\/a>\u00a0 I recommend starting off with a 1:4 ratio of liver to beef (or pork).\u00a0 I used the 1:3 ration and Keith immediately suspected something was &#8216;off&#8217;.<\/p>\n<p><img decoding=\"async\" loading=\"lazy\" class=\"size-full wp-image-4522 aligncenter\" src=\"http:\/\/www.daniellebinns.com\/stagingsite\/wp-content\/uploads\/2018\/04\/liver-meatballs.jpg\" alt=\"\" width=\"610\" height=\"458\" srcset=\"https:\/\/www.daniellebinns.com\/stagingsite\/wp-content\/uploads\/2018\/04\/liver-meatballs.jpg 610w, https:\/\/www.daniellebinns.com\/stagingsite\/wp-content\/uploads\/2018\/04\/liver-meatballs-300x225.jpg 300w, https:\/\/www.daniellebinns.com\/stagingsite\/wp-content\/uploads\/2018\/04\/liver-meatballs-500x375.jpg 500w, https:\/\/www.daniellebinns.com\/stagingsite\/wp-content\/uploads\/2018\/04\/liver-meatballs-510x382.jpg 510w\" sizes=\"(max-width: 610px) 100vw, 610px\" \/><\/p>\n<h4>Make meatballs<\/h4>\n<p>I have yet to try <a href=\"https:\/\/www.seriouseats.com\/recipes\/2012\/04\/chicken-liver-pork-meatballs.html\">this recipe<\/a> but if the meatloaf was a success I suspect meatballs will be too. Here are a few options:<\/p>\n<ul>\n<li><a href=\"https:\/\/commonsensehome.com\/double-bacon-liver-pate\/\">Bacon liver pate<\/a> &#8211; be sure to buy bacon from a reputable source.\u00a0 And <a href=\"https:\/\/amzn.to\/2JIbMva\">use a mayo like this<\/a> without hydrogenated oils.<\/li>\n<li><a href=\"http:\/\/www.easyrecipesforkidsguide.com\/chicken-liver-yams-pate\/\">Sweet potato pate<\/a><\/li>\n<li><a href=\"https:\/\/wellnessmama.com\/15535\/perfect-pate-recipe\/\">Healthy french liver pate<\/a><\/li>\n<\/ul>\n<\/div>\n<h4>Add other fixings<\/h4>\n<p>Research shows that pairing new foods with a favourite sauce or spice helps the taste buds adapt and enjoy the new food.
