Who put veggies in my granola?"},"content":{"rendered":"<p>You may not know this about me, but I wasn&#8217;t always a Family Nutritionist.\u00a0 In my former life, I had a career in marketing.\u00a0 I worked at, and with, advertising agencies and in the creative space for over 10 years, but honestly I wasn&#8217;t great at the creative stuff (I can say that now!).\u00a0 That&#8217;s why I worked hung up my corporate marketing shoes&#8230;<\/p>\n<p>Became a desperate mom of a picky eater&#8230;<\/p>\n<p>And a Certified Nutritionist&#8230;<\/p>\n<p>That those creative juices started to flow.\u00a0 Today you can put me in any kitchen or at any dining table, and a flurry of ideas come over me.\u00a0 Heck, I&#8217;m a creative genius!\u00a0 (haha, not really)<\/p>\n<p>Working with parents who want to shake things at home, and health-ify their families, means I get to come up with ideas all day long.\u00a0 And usually, parents want to see their kids eating more veggies.\u00a0 Yet, it&#8217;s not uncommon that those parents also need help getting more veggies into themselves!<\/p>\n<h2><span style=\"color: #33cccc;\">Yes, there are picky parents too.<\/span><\/h2>\n<p>And picky parents tend to have fussier kids (says the research).<\/p>\n<p>Shhhh&#8230;Don&#8217;t tell anyone, but when I work with families I often try to help both the BIG and LITTLE ones eat better.\u00a0 And more importantly, keeping it simple and tasty through the process.\u00a0 <strong>Because when the big ones (parents) eat well, children eat well too&#8230;eventually if all the other zucchini isn&#8217;t one of them.\u00a0 Fair enough kids!\u00a0 It&#8217;s mushy when cooked, has a bitter undertone when raw, and doesn&#8217;t add much value to most dishes. It&#8217;s not my favourite veggie either.<\/p>\n<p>Yes when we dry is out (either in the oven or a dehydrator) zucchini deserves some love.\u00a0 And what do you know, it has some health benefits too!<\/p>\n<h3><span style=\"color: #33cccc;\">Zucchini is a rock-star veggie!<\/span><\/h3>\n<p>According to <a href=\"https:\/\/foodrevolution.org\/blog\/zucchini-benefits\/\">Food Revolution<\/a>:<\/p>\n<ul>\n<li>Zucchini is high in water. That&#8217;s when I stumbled on this recipe from <a href=\"http:\/\/wholefedhomestead.com\/grain-free-zucchini-bread-granola\/\">WholeFedHomeStead<\/a>\u00a0and was instantly inspired.<\/p>\n<p>I made class=\"wprm-recipe-ingredient-unit\">cups<\/span>\n\t\t\t\t\t\t\t\t\t\t<span class=\"wprm-recipe-ingredient-name\">dehydrated zucchini <\/span>\n\t\t\t\t\t\t\t\t\t\t<span class=\"wprm-recipe-ingredient-notes\">chopped up<\/span>\n\t\t\t\t\t\t\t\t\t<\/li>\n\t\t\t\t\t\t\t<\/ul>\n\t\t<\/div>\n\t \t \t<\/div>\n\t\t\t<div class=\"wprm-recipe-instructions-container\">\n\t\t<h3 class=\"wprm-recipe-header\">Instructions<\/h3>\n\t\t\t\t<div class=\"wprm-recipe-instruction-group\">\n\t\t\t\t\t\t<ol class=\"wprm-recipe-instructions\">\n\t\t\t\t\t\t\t\t<li class=\"wprm-recipe-instruction\">\n\t\t\t\t\t\t\t\t\t\t<div class=\"wprm-recipe-instruction-text\"><p>Dehydrate zucchini in dehydrator.&nbsp; Note: I've not made dehydrated zucchini in the oven but it can be done.<\/p><\/div>\n\t\t\t\t\t\t\t\t\t\t\t\t\t\t<\/li>\n\t\t\t\t\t\t\t\t<li class=\"wprm-recipe-instruction\">\n\t\t\t\t\t\t\t\t\t\t<div class=\"wprm-recipe-instruction-text\"><p><span style=\"font-family: inherit;font-weight: inherit\">Preheat oven to 300\u00b0 F and lightly grease pan.<\/span><\/p><\/div>\n\t\t\t\t\t\t\t\t\t\t\t\t\t\t<\/li>\n\t\t\t\t\t\t\t\t<li class=\"wprm-recipe-instruction\">\n\t\t\t\t\t\t\t\t\t\t<div class=\"wprm-recipe-instruction-text\"><p>Mix honey, oil, salt, and cinnamon first.&nbsp; Then add nuts, seeds, and dehydrated zucchini.<\/p><\/div>\n\t\t\t\t\t\t\t\t\t\t\t\t\t\t<\/li>\n\t\t\t\t\t\t\t\t<li class=\"wprm-recipe-instruction\">\n\t\t\t\t\t\t\t\t\t\t<div class=\"wprm-recipe-instruction-text\"><p><span style=\"font-family: inherit;font-weight: inherit\">Pour granola onto the pan in a single layer.&nbsp;<\/span><br><\/p><\/div>\n\t\t\t\t\t\t\t\t\t\t\t\t\t\t<\/li>\n\t\t\t\t\t\t\t\t<li class=\"wprm-recipe-instruction\">\n\t\t\t\t\t\t\t\t\t\t<div class=\"wprm-recipe-instruction-text\"><p>Bake for 30 minutes, stirring occasionally. Remove once the granola starts to brown (will vary depending on oven types).&nbsp; &nbsp;<\/p><\/div>\n\t\t\t\t\t\t\t\t\t\t\t\t\t\t<\/li>\n\t\t\t\t\t\t\t<\/ol>\n\t\t<\/div>\n\t\t\t<\/div>\n\t\t\t\t<\/div>\n<\/div>\n<p>NO DEHYDRATOR?<\/p>\n<p>I haven&#8217;t personally used the oven to dehydrate my zucchini but here&#8217;s how it&#8217;s done.<\/p>\n<div id=\"mntl-sc-block_1-0-21\" class=\"comp mntl-sc-block mntl-sc-block-html\">\n<ul>\n<li>Preheat your oven to the lowest setting (typically 150 degrees F, but go lower if it&#8217;s an option).<\/li>\n<li>Prepare your zucchini (wash and shred with a mandoline).<\/li>\n<li>Arrange in a single layer on a cookie or baking sheet covered with parchment paper.<\/li>\n<li>Place them in an oven set and prop the door open about an inch.
