So I was the running solo with cooking, feeding, bathing, parenting, and surviving with my 3 children for ninety six hours (nope, I wasn&#8217;t counting).<\/p>\n<p>While all three girls were as\u00a0well behaved as I could expect at their young\u00a0age, it was still a lot of work.<\/p>\n<p>I kept thinking of all the single mothers out there that do this every day. \u00a0Parents who don&#8217;t get a break. \u00a0They are heroes in my books!<\/p>\n<p>So yes, during my Mother&#8217;s Day weekend I was mothering the 24\/7. \u00a0While I had big plans for being proactive during nap times, and post bedtime, I got nothing accomplished. \u00a0Including a much needed grocery shop.<\/p>\n<p>Once we ran out of the fresh stuff, the bulk of our meals came from the freezer, cupboard, or a takeout container. \u00a0 \u00a0I was in survival mode, feeding my three children whatever I could get on the table quickly (while having a clingy toddler in my arms).<\/p>\n<p><strong>One of the staples that made an appearance at lunch and dinner was frozen veggies.<\/strong><\/p>\n<p>Did I feel horrible for feeding my kids more FROZEN veggies than FRESH veggies this weekend?<\/p>\n<p>Heck no!<\/p>\n<p>Let me let you in on a little secret. \u00a0Frozen veggies aren&#8217;t the bad guy. \u00a0In fact, they are in some cases BETTER than fresh. \u00a0Whaaaat?<\/p>\n<p><img decoding=\"async\" loading=\"lazy\" class=\"wp-image-5943 aligncenter\" src=\"http:\/\/www.daniellebinns.com\/stagingsite\/wp-content\/uploads\/2019\/05\/frozen-veggies.png\" alt=\"fresh or frozen veggies\" width=\"606\" height=\"404\" srcset=\"https:\/\/www.daniellebinns.com\/stagingsite\/wp-content\/uploads\/2019\/05\/frozen-veggies.png 791w, https:\/\/www.daniellebinns.com\/stagingsite\/wp-content\/uploads\/2019\/05\/frozen-veggies-300x200.png 300w, https:\/\/www.daniellebinns.com\/stagingsite\/wp-content\/uploads\/2019\/05\/frozen-veggies-768x512.png 768w, https:\/\/www.daniellebinns.com\/stagingsite\/wp-content\/uploads\/2019\/05\/frozen-veggies-610x406.png 610w\" sizes=\"(max-width: 606px) 100vw, 606px\" \/><\/p>\n<h2><\/h2>\n<h2><span style=\"color: #33cccc;\">The Perks of Frozen Vegetables:<\/span><\/h2>\n<p>According to <a href=\"http:\/\/sciencenordic.com\/frozen-versus-fresh-vegetables\">Science Nordic<\/a>, frozen vegetables are harvested at maturity, then blanched to inactivate the enzymes and <strong>frozen soon after picking<\/strong>. For instance: it&#8217;s within 3 hours for peas, 6 hours for beans and 24 hours for other vegetables (which is shorter than the lifespan of a veggie on grocery store shelves).<\/p>\n<p>In a study by the <a href=\"https:\/\/www.sciencedirect.com\/science\/article\/pii\/S0889157517300418\">Journal of Food Composition and Analysis,<\/a>\u00a0they examined the nutrient lost between fresh and frozen product. \u00a0In the end, the\u00a0<strong>frozen produce outperformed \u201cfresh-stored\u201d<\/strong> more frequently than \u201cfresh-stored\u201d outperformed frozen.<\/p>\n<blockquote>\n<dl class=\"list\">\n<dd class=\"list-description\">\n<p id=\"par0020\">Consumers\u2019 assumption that fresh produce has much more <a title=\"Learn more about Nutrient Labeling from ScienceDirect's AI-generated Topic Pages\" href=\"https:\/\/www.sciencedirect.com\/topics\/food-science\/nutrient-labeling\">nutritional value<\/a> than frozen is incorrect.<\/p>\n<\/dd>\n<\/dl>\n<\/blockquote>\n<p>Some nutrients are higher in frozen veggies vs. fresh. \u00a0As an example, <strong>Vitamin C, lutein, and beta-carotene were higher<\/strong> in frozen broccoli and carrots compared with their fresh varieties.<\/p>\n<p>From an environmental perspective, frozen vegetables are best because they are typically transported by sea (vs. plan). \u00a0Air transportation of out of season fresh produce from other countries, and in-home preparation waste of <strong>fresh produce increases the carbon footprint<\/strong> <strong>significantly<\/strong> compared with frozen vegetables.<\/p>\n<p>That said, the\u00a0processing and storage of<strong> frozen vegetables may have a greater environmental impact<\/strong>. Yet &#8220;decreasing in-home waste dramatically reduces the carbon footprint compared with fresh vegetables&#8221;.<\/p>\n<h2><span style=\"color: #33cccc;\">Cooking tips:<\/span><\/h2>\n<p>Regardless of which you choose, the real nutrient loss\/differences occur in the cooking process.<\/p>\n<p>To retain the water soluble nutrients in your product <strong>opt for steaming versus boiling <\/strong>(because water\u00a0soluble vitamins are lost in the water).<\/p>\n<p>According to the<a href=\"https:\/\/fstjournal.org\/features\/28-2\/fresh-vs-frozen-vegetables\"> Institute of Food Science &amp; Technology<\/a>, &#8220;<strong>refrigeration and protective wrapping<\/strong> is recommended for most vegetables (except tomatoes and onions), as it helps maintain moisture content, reduces respiration rates, and improves vitamin retention&#8221;.<\/p>\n<p><img decoding=\"async\" loading=\"lazy\" class=\"wp-image-5942 aligncenter\" src=\"http:\/\/www.daniellebinns.com\/stagingsite\/wp-content\/uploads\/2019\/05\/qtq80-jqPNYI-1024x676.jpeg\" alt=\"frozen vegetables \" width=\"613\" height=\"405\" srcset=\"https:\/\/www.daniellebinns.com\/stagingsite\/wp-content\/uploads\/2019\/05\/qtq80-jqPNYI-1024x676.jpeg 1024w, https:\/\/www.daniellebinns.com\/stagingsite\/wp-content\/uploads\/2019\/05\/qtq80-jqPNYI-300x198.jpeg 300w, https:\/\/www.daniellebinns.com\/stagingsite\/wp-content\/uploads\/2019\/05\/qtq80-jqPNYI-768x507.jpeg 768w, https:\/\/www.daniellebinns.com\/stagingsite\/wp-content\/uploads\/2019\/05\/qtq80-jqPNYI-610x403.jpeg 610w, https:\/\/www.daniellebinns.com\/stagingsite\/wp-content\/uploads\/2019\/05\/qtq80-jqPNYI-1080x713.jpeg 1080w, https:\/\/www.daniellebinns.com\/stagingsite\/wp-content\/uploads\/2019\/05\/qtq80-jqPNYI.jpeg 2048w\" sizes=\"(max-width: 613px) 100vw, 613px\" \/><\/p>\n<h2><span style=\"color: #33cccc;\">My go-to frozen vegetables:<\/span><\/h2>\n<p>My freezer is always stocked with a few bags of frozen product for emergencies (like parenting solo on Mother&#8217;s Day weekend). My go-tos are:<\/p>\n<ul>\n<li><strong>Frozen cauliflower<\/strong> &#8211; an easy way to boost the nutrition of your smoothies and even muffins!<\/li>\n<li><strong>Frozen broccoli &#8211;<\/strong> I&#8217;ve also been known to add broccoli to my smoothies. \u00a0Otherwise just baking or steaming makes for a quick side dish.<\/li>\n<li><strong>Frozen mixed veggies<\/strong> &#8211; one with peppers, onions, snap peas, etc is awesome for making stirfries.<\/li>\n<li><strong>Frozen green peas<\/strong> &#8211; a great food for picky eaters as I mentioned <a href=\"http:\/\/www.daniellebinns.com\/stagingsite\/2016\/08\/kid-wont-eat-veggies\/\">here (Your child won&#8217;t eat veggies &#8211; until now!)<\/a>.<\/li>\n<li><strong>Frozen brussel sprouts<\/strong> &#8211; much more tender and easier to eat for my littlest one (who&#8217;s 18 months).<\/li>\n<\/ul>\n<h2><\/h2>\n<h2><span style=\"color: #33cccc;\">Preparing frozen vegetables:<\/span><\/h2>\n<p>And finally some tips to get the most out of your frozen veggies. \u00a0This article by <a href=\"https:\/\/www.thekitchn.com\/frozen-vegetable-mistakes-259663\">The Kitchn<\/a> gives you some helpful tricks.<\/p>\n<p>&nbsp;<\/p>\n<h2><span style=\"color: #33cccc;\">The Bottom Line:<\/span><\/h2>\n<ul>\n<li>Any veggie is better than no veggie!<\/li>\n<li>Choose frozen veggies when out of season to reduce your carbon footprint.<\/li>\n<li>Choose fresh veggies when in season, and opt for locally sourced (farmers markets are your friend!)<\/li>\n<li>Steam vs. boil fresh or frozen vs. boiling to retain nutrition.<\/li>\n<li>Properly store and seal produce with something <a href=\"https:\/\/amzn.to\/2vXXe4I\">like these food saver sheets<\/a>\u00a0or <a href=\"https:\/\/amzn.to\/2VYG3id\">these bees wax wraps<\/a>.<\/li>\n<li>Only purchase what you need (one third of the world&#8217;s total food production goes to waste!)<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<p><a href=\"http:\/\/www.daniellebinns.com\/stagingsite\/healthifymealtimes\/\"><img decoding=\"async\" loading=\"lazy\" class=\"size-full wp-image-4412 aligncenter\" src=\"http:\/\/www.daniellebinns.com\/stagingsite\/wp-content\/uploads\/2018\/03\/How-to-health-ify-mealtimes.png\" alt=\"\" width=\"560\" height=\"315\" srcset=\"https:\/\/www.daniellebinns.com\/stagingsite\/wp-content\/uploads\/2018\/03\/How-to-health-ify-mealtimes.png 560w, https:\/\/www.daniellebinns.com\/stagingsite\/wp-content\/uploads\/2018\/03\/How-to-health-ify-mealtimes-300x169.png 300w, https:\/\/www.daniellebinns.com\/stagingsite\/wp-content\/uploads\/2018\/03\/How-to-health-ify-mealtimes-480x270.png 480w\" sizes=\"(max-width: 560px) 100vw, 560px\" \/><\/a><\/p>\n<p>&nbsp;<\/p>\n","protected":false},"excerpt":{"rendered":"<p>My husband Keith was away for 4 nights (and inconveniently absent during the Mother&#8217;s Day weekend).
