{"id":6425,"date":"2020-05-14T12:50:34","date_gmt":"2020-05-14T16:50:34","guid":{"rendered":"http:\/\/www.daniellebinns.com\/stagingsite\/?p=6425"},"modified":"2020-05-14T16:28:56","modified_gmt":"2020-05-14T20:28:56","slug":"pumpkin-banana-muffins","status":"publish","type":"post","link":"https:\/\/www.daniellebinns.com\/stagingsite\/2020\/05\/pumpkin-banana-muffins\/","title":{"rendered":"Pumpkin Banana Muffins (gluten-free, dairy-free, nut-free)"},"content":{"rendered":"<p>How are things are going over here?\u00a0 As good as a mom of three could expect, I guess!<\/p>\n<p><strong>Sleep<\/strong> (B) The kids are going to bed later (so am I) but we have no school to wake up for!\u00a0 It&#8217;s also when I do a chunk of work.<\/p>\n<p><strong>Fitness<\/strong> (A-) I&#8217;m working out every morning and the kids get outside everyday. Could be more if it wasn&#8217;t frigid out there! There&#8217;s a pool waiting for us.<\/p>\n<p><strong>Health<\/strong> (A+) There are no coughs, colds, and thankfully no COVID in this house.\u00a0 Then again, we haven&#8217;t exposed ourselves to other humans either.<\/p>\n<p><strong>Food<\/strong> (A)\u00a0 We are cooking meals every single day. They aren&#8217;t complicated but they are healthy, tasty and my kids don&#8217;t complain about what&#8217;s on the table.\u00a0 That deserves an A right?\u00a0 Then again, this is my area of expertise so it should be an A!<\/p>\n<p><strong>School<\/strong> (C-) We don&#8217;t have much of a schedule yet. We have to fit homework in between my coaching calls, etc. So it&#8217;s a bit here and there, but not more than 30 minutes a day.\u00a0 Ugh!<\/p>\n<p>&nbsp;<\/p>\n<h2>However, if you count cooking with kids, we get a &#8220;B&#8221;.<\/h2>\n<p>Because every week my girls help me make a new recipe.\u00a0 We even record LIVE cooking classes for the parents and children in the <em>Raising Adventurous Eaters CLUB.\u00a0 <\/em>They learn a lot through the process. They now know what dates, baking powder, cocoa powder, and vanilla are.\u00a0 Even spirulina.\u00a0 And are getting the hang of measurements&#8230;slowly.<\/p>\n<p>That counts as homeschooling right?<\/p>\n<p>&nbsp;<\/p>\n<h2>Today was an extra good day because:<\/h2>\n<p>&#8230;I did a virtual workout with a friend (gosh I miss seeing other humans!),<\/p>\n<p>&#8230;My kids have already been outside (albeit, running around with Barbies and mermaids).<\/p>\n<p>&#8230;Sienna did her french homework <span style=\"text-decoration: underline;\">without<\/span> be begging her.<\/p>\n<p>&#8230;My 2 year old is <span style=\"text-decoration: underline;\">not<\/span> sitting on my lap write I finish this blog post.<\/p>\n<p>&#8230;My 4 year old made <em>Pumpkin Banana Oat Muffins.\u00a0 <\/em>And she pretty much did it by herself.\u00a0 I brought over the ingredients and she did the rest.<\/p>\n<p><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-large wp-image-6435\" src=\"http:\/\/www.daniellebinns.com\/stagingsite\/wp-content\/uploads\/2020\/03\/fullsizeoutput_5781-1024x1024.jpeg\" alt=\"Pumpkin Banana Oat Muffins\" width=\"1024\" height=\"1024\" srcset=\"http:\/\/www.daniellebinns.com\/stagingsite\/wp-content\/uploads\/2020\/03\/fullsizeoutput_5781-980x980.jpeg 980w, http:\/\/www.daniellebinns.com\/stagingsite\/wp-content\/uploads\/2020\/03\/fullsizeoutput_5781-480x480.jpeg 480w\" sizes=\"(min-width: 0px) and (max-width: 480px) 480px, (min-width: 481px) and (max-width: 980px) 980px, (min-width: 981px) 1024px, 100vw\" \/><\/p>\n<p>I asked Naomi what she wanted to call these <strong>Pumpkin Banana Oat Muffins<\/strong>, and her answer was &#8220;Orangey Muffins&#8221;.\u00a0 So there you have it.\u00a0 If it were up to me I would call them &#8220;<em>Cook your way through COVID<\/em>&#8221; muffins, or &#8220;<em>March Break that never ends<\/em>&#8221; muffins, or &#8220;<em>Homeschooling Plan C&#8221;<\/em>\u00a0muffins.<\/p>\n<p>But for now, they are &#8220;Orangey&#8221;.<\/p>\n<p>We make a lot of muffins.\u00a0 They are just too easy to pack with nutrition and turn into a balanced snack. But I don&#8217;t post recipes as often because I don&#8217;t want my blog to be a muffin haven.\u00a0 Yet these \u00a0<em>Pumpkin Banana Oat Muffins.<\/em> are different.\u00a0 They are:<\/p>\n<p><strong><em>crunchy on the top <\/em><\/strong><\/p>\n<p><strong><em>soft and moist in the middle<\/em><\/strong><\/p>\n<p><strong><em>with a beautiful orange colour (hence &#8220;orangey&#8221;)<\/em><\/strong><\/p>\n<p><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-large wp-image-6431\" src=\"http:\/\/www.daniellebinns.com\/stagingsite\/wp-content\/uploads\/2020\/03\/wDNPw1W2Rr6AeS4XGwEMA-1024x1024.jpg\" alt=\"\" width=\"1024\" height=\"1024\" srcset=\"http:\/\/www.daniellebinns.com\/stagingsite\/wp-content\/uploads\/2020\/03\/wDNPw1W2Rr6AeS4XGwEMA-980x980.jpg 980w, http:\/\/www.daniellebinns.com\/stagingsite\/wp-content\/uploads\/2020\/03\/wDNPw1W2Rr6AeS4XGwEMA-480x480.jpg 480w\" sizes=\"(min-width: 0px) and (max-width: 480px) 480px, (min-width: 481px) and (max-width: 980px) 980px, (min-width: 981px) 1024px, 100vw\" \/><\/p>\n<p>They were also perfect because the ingredients are flexible, simple and accessible (likely ones you already have at home or can have ordered in).\u00a0 Which is important for those who can&#8217;t get out to grab a bunch of random ingredients.<\/p>\n<p><strong><em>Canned pumpkin (<a href=\"https:\/\/amzn.to\/2IZBITA\">with Non-BPA, non-BPS can lining<\/a>) <\/em><\/strong><em>&#8211; you can swap the pumpkin with mashed cooked carrots (or more banana)<\/em><\/p>\n<p><strong><em>Banana\u00a0<\/em><\/strong><\/p>\n<p><strong><em>Oats (<a href=\"https:\/\/amzn.to\/33vFr4S\">rolled oats<\/a>, not quick)<\/em><\/strong><\/p>\n<p><strong><em>Coconut oil\u00a0<\/em><\/strong><\/p>\n<p><b><i>Dairy-free milk (my new favourite is <a href=\"https:\/\/elmhurst1925.com\/collections\/unsweetened\">Elmhurst<\/a>)<\/i><\/b><\/p>\n<p>If you have a lot of treats laying around, these <em>Pumpkin Banana Oat Muffins<\/em> are a healthy (no-sugar) distraction.\u00a0 Case in point: I couldn&#8217;t get a picture before someone stole a muffin.
