or as\u00a0&#8216;treats&#8217;, because kids will start to show a preference for\u00a0those &#8216;treats&#8217; that we withhold.\u00a0 Every week or two I experiment with putting a healthy spin on desserts that are toddler and &#8216;picky eater&#8217; friendly.\u00a0\u00a0And when it&#8217;s my husband&#8217;s birthday,\u00a0I have no qualms about bringing a little sweetness into our lives.\u00a0 Like this Black Bean Brownie &#8220;Birthday Cake&#8221;!<\/p>\n<p><a href=\"http:\/\/www.daniellebinns.com\/stagingsite\/wp-content\/uploads\/2015\/09\/Black-Bean-Brownie-Cake.jpg\"><img decoding=\"async\" loading=\"lazy\" class=\"aligncenter size-large wp-image-951\" src=\"http:\/\/www.daniellebinns.com\/stagingsite\/wp-content\/uploads\/2015\/09\/Black-Bean-Brownie-Cake-1024x768.jpg\" alt=\"Healthy black bean brownie \" width=\"1024\" height=\"768\" srcset=\"https:\/\/www.daniellebinns.com\/stagingsite\/wp-content\/uploads\/2015\/09\/Black-Bean-Brownie-Cake-1024x768.jpg 1024w, https:\/\/www.daniellebinns.com\/stagingsite\/wp-content\/uploads\/2015\/09\/Black-Bean-Brownie-Cake-300x225.jpg 300w, https:\/\/www.daniellebinns.com\/stagingsite\/wp-content\/uploads\/2015\/09\/Black-Bean-Brownie-Cake-610x458.jpg 610w, https:\/\/www.daniellebinns.com\/stagingsite\/wp-content\/uploads\/2015\/09\/Black-Bean-Brownie-Cake-1080x810.jpg 1080w, https:\/\/www.daniellebinns.com\/stagingsite\/wp-content\/uploads\/2015\/09\/Black-Bean-Brownie-Cake.jpg 2048w\" sizes=\"(max-width: 1024px) 100vw, 1024px\" \/><\/a><\/p>\n<p>This year I decided to get creative with a protein-packed Black Bean\u00a0Birthday\u00a0&#8216;Cake&#8217;, which ultimately became\u00a0this dense\u00a0(and not esthetically pleasing) &#8216;Brownie&#8217;.\u00a0 It&#8217;s a sad looking cake in these photos, but remember, I&#8217;m a Nutritionist not a Food Stylist \ud83d\ude09\u00a0\u00a0 This is where I ask you not to judge a book by its cover.\u00a0 But I do recommend grabbing a BIG glass of coconut milk to sip while sinking your teeth into this.<\/p>\n<h2><span style=\"color: #33cccc;\">Black Bean Brownie &#8216;<span style=\"color: #33cccc;\">Birthday <\/span>Cake&#8217;<\/span>\u00a0(dairy-free, gluten-free, grain-free)<\/h2>\n<p>The recipe was inspired by a <em>Chocolate Chili Cookie<\/em> over at\u00a0<a href=\"http:\/\/www.mynewroots.org\/site\/2011\/11\/black-bean-chocolate-chili-cherry-cookies-2\/\" target=\"_blank\">My New Roots<\/a>, one of my favourite vegan bloggers.\u00a0 The reviews suggested that this had more of a cake-like consistency, so I decided to be the guinea pig and attempt\u00a0a cake.\u00a0\u00a0The verdict:\u00a0 it doesn&#8217;t look like a cake, nor does it taste like one, but it still satisfied the sweet tooth.<\/p>\n<p>The\u00a0<em>Coconut Milk Frosting <\/em>was adapted from <a href=\"http:\/\/flaxandhoney.com\/2013\/02\/13\/coconut-cream-frosting\/\" target=\"_blank\">Flax and Honey<\/a> and is a must to complement the density of this dessert.\u00a0 We cut the maple syrup in half but give it a taste and add more to your liking.\u00a0 I also halved the entire recipe and it was more than enough for this cake\/brownie.<\/p>\n<div><strong>Servings<\/strong>:\u00a0 9 squares (approx. depending on how big or little you cut them)<\/div>\n<div><\/div>\n<div><strong>Ingredients<\/strong>:<\/div>\n<ul>\n<li>1 \u00bd cups black beans (soaked if not canned)<\/li>\n<li>3\u00a0Tbsp. coconut oil (or ghee)<\/li>\n<li>1\/3 cup cacao powder<\/li>\n<li>1\/4 tsp. sea salt<\/li>\n<li>1\/3 cup maple syrup (or honey)<\/li>\n<li>2 eggs<\/li>\n<li>1 tsp. vanilla extract<\/li>\n<\/ul>\n<div><strong>Directions<\/strong>:<\/div>\n<ol>\n<li>Preheat oven to 375\u00b0F. Line a 9&#215;9 cake pan with parchment paper.<\/li>\n<li>Blend drained and well-rinsed beans, coconut oil, cacao, and salt in a food processor.<\/li>\n<li>Add in maple syrup and eggs.<\/li>\n<li>Spoon batter into cake pan and bake for\u00a0approx. 20-25 minutes.\u00a0 When the edges start to brown poke the middle with a toothpick or fork to determine if fully baked.<\/li>\n<li>Cool and top with Coconut Cream Frosting.<\/li>\n<\/ol>\n<h2>Enjoy a nutrient-dense treat<\/h2>\n<p>As you or your little one are savouring this black bean brownie,\u00a0I wanted to share\u00a0what each piece contains:<\/p>\n<ul>\n<li>6 grams of protein<\/li>\n<li>7 grams of sugar (the average brownie can contain upwards of 30 grams!)<\/li>\n<li>3 grams of fiber (<a href=\"http:\/\/www.whfoods.com\/genpage.php?tname=foodspice&amp;dbid=2\" target=\"_blank\">black beans have special substances <\/a>that keep the digestive system and colon healthy)<\/li>\n<li>phytonutrients which give\u00a0black beans their rich dark colour (anti-inflammatory and\u00a0antioxidant effects)<\/li>\n<\/ul>\n<p><a href=\"http:\/\/www.daniellebinns.com\/stagingsite\/wp-content\/uploads\/2015\/09\/Black-Bean-Birthday-Brownie-6.jpg\"><img decoding=\"async\" loading=\"lazy\" class=\"aligncenter wp-image-952\" beans?<\/h3>\n<p>Legumes, grains, nuts and seeds contain something called phytic acid.\u00a0 This enzyme inhibitor plays a protective role in plant foods to prevent germination, but when consumed by humans it binds to key minerals such as iron, zinc and calcium preventing their absorption.\u00a0 As we know, these minerals (and many others) are important for our little ones, especially our picky eaters.\u00a0 Iron and zinc deficiencies\u00a0are <a href=\"http:\/\/www.daniellebinns.com\/stagingsite\/2015\/08\/4-ways-to-boost-your-childs-appetite\/\" target=\"_blank\">linked to appetite suppression<\/a> so we want to make sure we maximize every opportunity to get these nutrients into their bodies.\u00a0 <a href=\"http:\/\/www.phyticacid.org\/soaking-beans\/\" target=\"_blank\">Soaking plant foods<\/a>, including beans is more effective at reducing the phytic acid content versus cooking the beans alone.\u00a0\u00a0\u00a0If using dried beans, soak for 18 hours in warm water.<\/p>\n<p>Before we dug into my homemade\u00a0brownie, we gathered for an\u00a0impromptu family photo.\u00a0\u00a0Naomi looks angry.\u00a0 Sienna is blowing out the candle
