Sauce\u00a0on days like this when I&#8217;m running short on veggies.<\/p>\n<p>I&#8217;m also thankful for my wonderful father who gave me\u00a0my two hands\u00a0back\u00a0and is watching the girls while I write this post.\u00a0\u00a0I think my fellow moms (especially those with picky eaters) are going to love me for this recipe.\u00a0\u00a0Particularly if you&#8217;re one of those moms who is having a heck of a time trying to get your child to eat vegetables.<\/p>\n<p>I wouldn&#8217;t say that cauliflower falls at the top of any toddler&#8217;s list\u00a0of favourite foods (or any adult&#8217;s list for that matter).\u00a0 Cauliflower is not the most appetizing in appearance (white = blah) nor is it easy to eat, or all that tasty on it&#8217;s own.\u00a0\u00a0 That&#8217;s my perspective based on experience, however you might be <em>that <\/em>lucky mom with <em>that <\/em>toddler who loves cauliflower.<\/p>\n<p>Hooray for you and him\/her because, despite it&#8217;s lack-luster appearance,\u00a0<a href=\"http:\/\/www.whfoods.com\/genpage.php?tname=foodspice&amp;dbid=13\" target=\"_blank\">cauliflower had a slew of nutritional benefits<\/a> including:<\/p>\n<ul>\n<li><strong>Vitamin C<\/strong> (To keep the immune system strong and\u00a0fend off colds)<\/li>\n<li><strong>Vitamin K<\/strong> (To build strong bones.\u00a0 <a href=\"http:\/\/www.whfoods.com\/genpage.php?tname=nutrient&amp;dbid=112\" target=\"_blank\">Studies show <\/a>that\u00a0those\u00a0who are vitamin K deficient have a greater risk of fracture)<\/li>\n<li><strong>Fiber<\/strong> (To keep those bowels regular with 9 grams in just 100 calories)<\/li>\n<\/ul>\n<p>What I like about this recipe is it&#8217;s flexibility.\u00a0 You can toss it with pasta, rice, put on top of fish or chicken, use it as a dip, or enjoy it as a soup.\u00a0\u00a0 I tried all of the above (including licking it off my fingers when no one was looking).\u00a0\u00a0 The nutritional yeast lends a cheesy flavor so\u00a0we used this cauliflower sauce as a ricotta substitute in this ridiculously easy no-noodle zucchini lasagna.<\/p>\n<p><a href=\"http:\/\/www.daniellebinns.com\/stagingsite\/wp-content\/uploads\/2015\/09\/Zucchini-Lasagna-.jpg\"><img decoding=\"async\" loading=\"lazy\" class=\"aligncenter size-full wp-image-985\" src=\"http:\/\/www.daniellebinns.com\/stagingsite\/wp-content\/uploads\/2015\/09\/Zucchini-Lasagna-.jpg\" alt=\"Gluten-free zucchini lasagna\" width=\"640\" height=\"640\" srcset=\"https:\/\/www.daniellebinns.com\/stagingsite\/wp-content\/uploads\/2015\/09\/Zucchini-Lasagna-.jpg 640w, https:\/\/www.daniellebinns.com\/stagingsite\/wp-content\/uploads\/2015\/09\/Zucchini-Lasagna--150x150.jpg 150w, https:\/\/www.daniellebinns.com\/stagingsite\/wp-content\/uploads\/2015\/09\/Zucchini-Lasagna--300x300.jpg 300w, https:\/\/www.daniellebinns.com\/stagingsite\/wp-content\/uploads\/2015\/09\/Zucchini-Lasagna--610x610.jpg 610w\" sizes=\"(max-width: 640px) 100vw, 640px\" \/><\/a><\/p>\n<h2><span style=\"color: #33cccc;\">Cauliflower &#8220;Alfredo&#8221;
